For Fluffy Pancakes:
Care and love! Most importantly, by not over mixing the batter. That would definitely be the most common mistake. Gently fold in your liquid until the dry mix is just covered. It’s okay to have a few lumps, that’s normal.
Use a 3oz scoop to get thick fluffy pancakes.
Cook pancakes on medium low, to medium heat. Watch for bubbles then flip. Add your blueberries on the flip side to prevent burning.
How do I warm up the compote?
Take your blueberry compote out of the fridge and bring to room temp before your spoon it over your cooked pancakes. Smother with maple syrup and whipped cream.
Want to make your own? Our blueberry compote is simply blueberries and sugar. Approximately 2 cups of fruit to ⅓ cup of sugar, Donna loves to add a touch of lemon zest as well! Experiment with it and use a variation of your favourite fruits.
Wally’s Cheesy Savoury Tart
Warm up your tart in a preheated 325°F oven for 12-15 minutes. The tart comes packaged on a piece of parchment paper. Slide the parchment and tart right on to your baking sheet.
Mildred’s Currant Scones
If you don’t have 35% cream to brush on top of your scones, use a bit of melted butter, then sprinkle with sugar. If you don’t have butter just sprinkle with a little extra sugar.
Best Buttermilk Biscuits
Have day old biscuits? Cut them in half, pop them in the toaster, butter and serve with 2 poached eggs on top and some of your favourite chutney. Yum!
